Recipes From Roma’s Kitchen

JAPCHAI (Korean Noodle Speciality)

Ingredients

4 cooked potions of dangmeon cooked sweet potato starch noodles

  • 1 Carrot, peeled and julienned
  • 1/2 Onion, cut into 1/4″ slices
  • 2 cups oyster mushrooms, cut into bitesized pieces
  • 1 1/2 TBSP white granulated sugar
  • 3 TBSP Soya Sauce
  • 2 tspn. vegetable oil
  • Pinch of Black Pepper (optional)
  • 1 tspn. roasted Sesame seeds (optional)

STEP 1

If Danmyeon noodles are long, carefully cut the noodles with scissors to make them fit the diameter of the diameter of the inner pot. Lay the noodles in a criss-cross pattern to prevent clumping.

STEP 2

Lay the Carrots, Onions and mushrooms on top of noodles.

STEP 3.

In a small bowl, whisk sugar, soy sauce, vegetable oil, and 3/4 cup of water until well combined. Drizzle liquid over the vegetables and noodles.

These quantities are sufficient to serve four or you can serve it as a side dish. I once served it with a Sri Lankan Shrimp Curry and it was very nice. You can even put some sauteed Shrimp in a little Chilli Sauce (not too much) or just drizzle with a spoon on top of the whole dish.

Should you have any questions or requests, please email me and I will be happy to help you.

This Korean Dish is absolutely lovely to look at and a treat in it’s light but interesting flavors.

I am answering the first question which you will send. The DANGMEON (sweet potato starch noodles) is not difficult to find in the Asian Markets and are sold in packets.

Simple to make and is not drowned in different flavors.

Enjoy!

FTA agreement with China, an urgent need– Former Envoy to China, Dr. Palitha Kohona

Irrespective of which Government is in power Sri Lanka must continue negotiations and sign the Free Trade Agreement with China urgently, said the former Ambassador to China, Dr. Palitha Kohona. Most of the ground work for this has been done. “However, Sri Lanka must negotiate this FTA with care and try to gain more concessions during exports. One must also remember that China has a huge export market and negotiators should look at this as well.”

Meet grandpa Manilal Perera

Surprise! Surprise! Yes, it certainly came to me as a mega surprise to hear that singer Manilal Perera is a grandpa!

We had a very long chit-chat, over the phone, and then he paid me a visit to elaborate further on his family life…and he came on a bicycle! Although the bike is battery-powered, he says he uses the pedals…as a form of exercise. Manilal, who is still extremely popular as a vocalist, is the father of two girls and two boys…from three marriages! His eldest is Tashiya, 29, and she lives in Germany. She is the mother of Matteo, who is one and a half years old, and that makes Manilal a grandpa!

He died early on the morning of September 9th, 2024, surrounded by his family.

Jones starred in dozens of films including Field of Dreams, Coming To America, Conan the Barbarian and The Lion King. He was best known for giving the Star Wars supervillain Darth Vader his distinctive, gravelly voice.

Graeme Hamer passed away in Australia on September 2nd, 2024. Husband of Yolande, brother of Kenneth. Funeral Arrangements are pending.

INGREDIENTS

  • 1green apple
  • 2 fresh red chillies, halved and seeded
  • 1garlic clove
  • 8 fresh mint leaves
  • juice of 1 lemon
  • salt and ground black pepper

METHOD

  1. Slice the bottom off the orange so that it stands firmly on a chopping board. Using a large, sharp knife, remove the peel slicing from the top of the orange.
  2. Fold the orange in one hand over the bowl. Slice towards the middle of the fruit, to one side of a segment, and then gently twist the knife to ease the segment away from the membrane and out of the orange. Remove to remove all of the segments and squeeze any juice from the remaining membrane.
  3. Peel the apple, slice it into wedges and remove the core.
  4. Place the chillies in a blender or food processor with the orange segments and juice, apple wedges, garlic and mint.
  5. Process until smooth, with the motor running, pour in the lemon juice.
  6. Season, pour into a bowl or small pitcher and serve immediately.

SERVES 4

This very unusual Salsa makes a fantastic marinade for all kinds of shell fish, and it is deliciuos when drizzled over freshly barbecued meat.

If you are feeling really fiery, don’t seed the chillies!

That will make the Salsa particularly hot and fierce!

Changing Architecture of Jaffna’s Temples

Although the existing popular discourses on Hindu temple architecture in Sri Lanka link temple styles with the South Indian or Dravidian, the Jaffna examples from the colonial era exemplify a rupture. In the last 30 years, villu mandapams or curvature ceiling halls have become the desired popular form. The emergence of this local style coincides with the sweeping changes in the social fabric ignited by civil war, displacement, formation of Sri Lankan Tamil diaspora, Sanskritation of temple rituals, and availability of new building materials and technologies.

Zoysa, the esteemed Finance Minister, played a pivotal role in shaping Sri Lanka’s economic landscape. With grace and dedication, Roma stood by his side as his private secretary, demonstrating that true greatness often runs in the family. Roma was a leader in our community and was President of the Sri Lanka Association in 2001. She also provided yeomen service to the Sri Lanka Foundation, where she originated fashion and beauty shows. Our community also tasted gourmet cooking from Roma’s kitchen, with her exotic recipes published in the ‘Good News’ for years.” The celebration ended with musical tributes by Sondra Kumaraperu and Ingrid Mellican, followed by a buffet lunch.

Moussaka

FOR THE MEAT SAUCE:

2 Tbs. extra-virgin olive oil

2 medium yellow onions, finely chopped (about 2 ½ cups)

Kosher salt and freshly ground black pepper

1 lb 80% lean ground beef

½ cup dry red wine

½ cup canned crushed tomatoes

¼ cup finely chopped fresh flat-leaf parsley

1 Tbs. tomato paste

¼ tsp. freshly grated nutmeg

FOR THE EGGPLANT:

3 lb. eggplant (about two medium or 5 to 6 baby eggplant), trimmed and sliced crosswise about ¼ inch thick

Kosher salt

3 Tbs. extra-virgin olive oil; more as needed

Freshly ground black pepper

FOR THE POTATOES:

1 cup extra-virgin olive oil

3 medium russet potatoes (about two and a half pounds), rinsed and dried

Kosher salt

FOR THE BÉCHAMEL:

3 cups whole milk

4 oz. (½ cup) unsalted butter

2 ¼ oz. (½ cup) unbleached all-purpose flour

2 large eggs, beaten

½ oz. finely grated Grana Padano, Parmigiana- Reggiano, or Pecorino Romano (½ cup)

⅛ tsp. Freshly grated nutmeg; more to taste

Kosher salt

MAKING THE MEAT SAUCE

Heat the oil in a 12-inch skillet over medium heat. Add the onions, a generous pinch of salt and a few grinds of pepper. Cook, stirring occasionally until translucent-5 to 8 minutes.

Turn the heat up to medium high. Add the beef, a pinch of salt and a few grinds of pepper. Cook, stirring occasionally and breaking up the meat until browned-7 to 10 minutes. Add the wine; turn the heat down to medium and cook, stirring occasionally until absorbed-about 3 minutes. Add the tomatoes, parsley, tomato paste and nutmeg, stirring to combine. Turn the heat down to low and gently simmer to meld the flavors, stirring once or twice- about 5 minutes. Season to taste with salt and pepper. Set aside. (The meat sauce can be refrigerated for up to 2 days or frozen for up to 3 months).

SALT THE EGGPLANT

Cover the bottom and sides of a large colander with a single layer of the eggplant slices and sprinkle generously with salt. Top with more layers of eggplant, salting each layer until all the slices have been used. Let sit in the sink or over a large bowl for 30 minutes to 1 hour.

PAN-FRY THE POTATOES

Heat the oil in a heavy-duty 12-inch skillet (preferably cast-iron) over medium heat until shimmering hot (about 375°F).

Meanwhile, slice the potatoes crosswise into ¼-inch rounds, discarding the end slices. Working in batches, fry 10-15 slices in a single layer, flipping once until the potatoes are tender-about 4 minutes.

Blot excess oil with paper towels and lightly season with salt.

ROAST THE EGGPLANT

Position racks in the upper and lower thirds of the oven and heat oven to about 350°F.

Rinse the eggplant in cold water to remove excess salt. Press the slices between paper towels or clean kitchen towels to dry, then arrange them in a single layer on two large rimmed baking sheets. Lightly brush both sides off each slice with the olive oil and lightly season both sides with salt and pepper. Roast, flipping once, until tender and lightly browned- 30 to 35 minutes total.

MAKE THE BÉCHAMEL

Heat the milk in a 2-quart saucepan over medium heat until steaming; set aside.Melt the butter in a 4-quart saucepan over medium low heat. Add the flour and cook, whisking constantly, until golden-about 5 minutes. Slowly whisk in the hot milk and then simmer gently, whisking until the raw flour taste is gone and the sauce thickens- about 5 minutes. Turn the heat down to low and gradually whisk in the eggs; whisk vigorously to combine. Remove from the heat. Set aside one Tbs. of the cheese for assembly and add the remaining cheese to the sauce along with the nutmeg and one tsp. salt; Whisk until smooth. Season to taste with more salt and nutmeg.

ASSEMBLE AND BAKE

Position a rack in center of oven and heat the oven to 350°F. Lightly oil a 9×13 -inch baking dish.

Arrange potatoes in an even layer on the bottom of the dish, overlapping the slices like shingles. Sprinkle evenly with 1 tsp. of the reserved cheese.

Arrange the eggplant slices as you did the potatoes and evenly sprinkle with 1 tsp. of the remaining cheese. Spread the meat sauce in an even layer on top of the eggplant. Pour the béchamel over the meat sauce and spread in an even layer. Evenly sprinkle with the remaining 1 tsp. cheese. Bake until the top is golden brown-50 to 60 minutes. Let sit at room temperature for at least 30 minutes before serving

This favorite casserole of Greeks and non-Greeks alike takes some time to prepare, but it is oh so worth the effort!

She walked gently into the night… A tribute to Roma De Zoysa By Palitha Pelpola

I did not know Roma de Zoysa prior to my arriving in Southern California. But her impeccable pedigree, which needed no exaggeration, had been a subject of many conversations that occurred in the Los Angeles circles. When I met her for the first time, the immediacy of her presence was no surprise either. The impression she created has been embedded in me never to fade away, ever.

Roma’s journey of life through nine decades on earth has been one that most Ceylonese ladies would compete enviably to share; born into one of the most prestigious and elite Down-South families, Roma, amongst mostly men, led not only her own life in her own terms but also influenced a then patriarchal social environment with stoicism of a man and elegance of a graceful lady. She could not let a social event occur without her serene intervention nor could she wait without contributing her mite which was of enormous magnitude in material finesse and spiritual guidance.

An association which was initiated by a mutual friend, Roma made friends with Ardni, my wife and Nadyenka, our daughter, almost instantly. Nadyenka was one of her favorite friends she made amongst many children of that generation. Roma loved to share with them her experience and priceless knowledge that was the exclusive property of those who attended a ‘finishing school’ of yesteryear.

She was proud of her lineage and rightfully so. The De Zoysa family in Ceylon was not second to any elite families that embellished the passageway of power and prestige throughout the twentieth century. Her father, Stanley De Zoysa, was the Minister of Finance in the Bandaranaike government in 1956. Amongst her paternal uncles were Dickey, a well known businessman of the time, Sydney, Deputy Inspector General of Police, Lucian, a most lovable cricket commentator, and A. C. (Bunty), a foremost criminal lawyer of rare distinction ever to carry a brief in the Hulftsdorp corridors. Roma’s grandfather was Sir Francis De Zoysa, a member of the then State Council and also a President of Ceylon National Congress.

Roma may have been extremely proud of her heritage but she never used that prestige either to wear as an obnoxious badge or a preceding signal of identification. She showed that prestige and grace of heritage with the calm of a gentle-lady and elegance of a non-interfering mother or an aunt. Never giving into the growing influence of men, she waltzed through that overpowering masculinity with a disarming smile and repartee that was as sharp as a bald eagle’s beak. Wherever she cast her presence, she made friends and associates who eventually ran out of words to describe her elegance and grace.

She was the Secretary of the Sri Lanka America Association of Southern California (SLAASC) and the very next year was elected unanimously for the post of President. Her contribution as President of SLAASC was unique and still remains a subject of the Southern California conversation..

Rare indeed are such men and women amongst us. With each passing day, we shall remember the fondest of memories of them; when found in the isolation of loneliness, when wandering through the crowded streets in the global vista, when entangled in a web of relations that never promises a just resolution, we might find solace and peace of mind when we passage through the memories of such men and women. Roma belongs to that select few. Counsel rendered to her friends and foes alike in the simplest and most intimate manner tends to disarm the fiercest of foes and the gentlest of associates.

I was in that rare circle of Roma’s friends with whom she interacted so freely and candidly knowing in the most non-invasive fashion that her exchange of ideas and thoughts was unique and most certainly absolute and rewarding. Men and women would remember her charm more than her cursory comments; they will cherish her company and partake of the food she personally prepared with utmost care and precision of a unique culinary artist whose taste of pepper and salt was as sharp as the correct amount of sweetness for her most talked about unearthly desserts.

Yet Roma too was human; she endured and withstood all the suffering and inequities of human life. She lived a full life; Sonali, her loving daughter, living in Southern California is a fitting daughter and a legacy of a graceful lady. Sonali had informed Ardni about the peaceful passing away of her mother, Roma. When Ardni told me about Roma’s demise, I couldn’t help myself but think about her in the most gentle way she had lived. On Thursday June twentieth night, before the stroke of midnight hour, Roma, walked gently into the night never to return, ever. We shall cherish her memories.

May she attain Nibbana!
