Tourism Sector Earns Record Rs.7 billion in 45 Days

Amid a rejuvenated focus on revitalising Sri Lanka’s tourism industry, President Ranil Wickremesinghe embarked on an observation tour in Tangalle and Galle, underscoring the Government’s commitment to enhancing tourist facilities. President Wickremesinghe’s visit came in the backdrop of record earnings from tourism this year (45 days) alone, which amounted to Rs.7,000 million from 306,708 tourists. The tourism surge in Sri Lanka is evident from the unprecedented 106 percent year-on-year increase in tourist arrivals, with around 9,000 visitors daily.

Kumara is the grand daughter of Chandran and Judy Rutnam.

Enoka Amali Fernando’s journey began at Musaeus College and Stafford International in Sri Lanka, where she won numerous awards for swimming and academic subjects. She went on to represent Sri Lanka at the Asian Games for swimming. After winning multiple scholarships for her final two years of college in the USA, Enoka graduated Summa Cum Laude from North Carolina State University with a double degree in Aerospace & Aeronautical Engineering.

Enoka has more than 20 years of experience as an aeronautical engineer.

Sri Lanka Foundation: Meet Exceptional Achievement Award winner Roy Malleappah

By trade, Roy is a construction engineer in Los Angeles, California. However, Roy decided to handle the epidemic of snakebites in Sri Lanka, as it has one of the highest numbers of snakebite-related fatalities in the world. Snakebite envenoming is a WHO-recognized neglected tropical disease. Roy and his USAVRI team have worked tirelessly for over a decade in pursuit of his goal: coordinating the production of the first effective polyvalent antivenom for Sri Lanka’s snakebite victims. Roy’s vision at the outset was to develop a medicine that would not need refrigeration, as most antivenoms do, and that would be simple to administer, facilitating quick implementation in rural dispensaries.

US Ambassador to Sri Lanka Julie Chung has extended a warm invitation to Hollywood actor Jason Momoa, known for his advocacy for environmental conservation, to witness Sri Lanka’s mangrove restoration efforts and explore its vibrant marine ecosystem. The Ambassador’s invitation comes hot on the heels of the Aquaman star Momoa congratulating Sri Lanka for being declared a UN World Restoration Flagship, in recognition of the country’s efforts to rebuild and restore its mangrove ecosystems.

The fashion show Mystique Fusion was organized by the Sri Lanka Muslim Association women’s branch. Held at the Cerritos Center for Performing Arts on Sunday January 28th. This event was attended by over 240 ladies from the Sri Lanka, Pakistani, Indian and Middle Eastern community.

 The opening dance sequence was done by SLF followed by the Fashion Show and Bollywood Dancing by the Ada Dance Troupe. The evening was filled with an array of colors and fashionable ladies enjoying the fun and food.

"Slow Food" at Mount Lavinia Hotel Makes a Grand Comeback

Mount Lavinia Hotel (MLH), hosted its first Slow Food event for the year recently at the newly renovated Horizon Rooftop. This occasion brought together prominent figures, including the German Ambassador, the Cuban Ambassador, corporate leaders, key opinion leaders in the country, and media partners. Slow food, a concept that emphasizes the importance of locally sourced ingredients and the connection between food and the environment, made a grand comeback with the leadership of Anura Dewapura – Chief Operating Officer of MLHG. Known for hosting a variety of Slow Food events in the past, “Slow Food Italia” was the first of the series of twelve slow food events MLH has planned for this year, each highlighting a different cuisine every month.

Dipping Sauces

1.Ginger-Soy Dipping Sauce

  Ingredients

  •   1 teaspoon Grated Ginger
  •   3/4 teaspoon Brown Sugar
  •   1/4 teaspoon Sriracha
  •   1 Tablespoon Worcestershire Sauce
  •   1/4 cup Soy Sauce
  •   1/4 cup Rice Wine vinegar

2.Spicy Peanut Dipping Sauce

  Ingredients

  •   1/3 cup Soy Sauce
  •   1/4 cup Peanut Butter
  •  2 Tablespoons Honey or Brown Sugar
  •   2 Tablespoons Rice Vinegar
  •   1/2 Tablespoon Apple Cider Vinegar
  •   1 1/2 teaspoon minced Garlic
  •   1/2 teaspoon grated Ginger
  •   Sriracha to taste

3.Sweet and Sour Dipping Sauce

  Ingredients

  •   1/2 cup Sugar
  •   3 Tablespoons Ketchup
  •   1/3 cup distilled White Vinegar
  •   1 Tablespoon Soy Sauce
  •   1 teaspoon Garlic Salt

4.Hoisin Almond Dipping Sauce

  Ingredients

  •   1 Tablespoon Sugar
  •   1/3 cup Hoisin Sauce
  •   1 Tablespoon Vegetable Oil
  •   1 Tablespoon minced Garlic 
  •   1Tablespoon sweet chillie sauce
  •   2-3 Tablespoons Water
  •   3 Spoons of Almond Butter or any nut

5.Spicy Mango Dipping Sauce

  Ingredients

  •   1/2 Tablespoon Red Onion, chopped
  •   1 teaspoon Garlic minced
  •   1 Tablespoon Soy Sauce
  •   1 Tablespoon Lime juice
  •   1 Tablespoon Sweet Chillie Sauce
  •   1/2 cup Fresh frozen Mango Chunks

Make each Sauce by combining ingredients in a blender till smooth and serve in a sauce boat with a serving spoon.

These dipping sauces are great with Chinese dumplings, Spring Rolls, Cutlets and some Pastries.
