Bangladesh Film Festival illuminates Colombo

The third Bangladesh Film Festival unfolded on Friday (6) at Tharangani Theatre, Sri Lankan National Film Corporation, with the screening of internationally acclaimed movie ‘Rehana Maryam Noor’ directed by Abdullah Mohammad Saad. The Bangladesh High Commission in Sri Lanka is organising the film festival which will continue. A sizeable crowd, including renowned personalities of local cinema and cine connoisseurs, braced the rain in Colombo to experience Bangladeshi movies. Actress Swarna Mallawarachchi graced the occasion as chief guest. Director Anoma Rajakaruna as the curator of the festival introduced the movie to the audience before screening.

800: Murali’s inspiring story unfolds on silver screen

The film ‘800,’ based on the life of Muthiah Muralitharan, widely regarded as one of the greatest spinners in the world, has commenced screening in India. The title refers to Murali’s 800 Test wickets, a record that has still not been equalled. The film ‘800’ was filmed in various locations, including Sri Lanka, India, and Australia. It was simultaneously released in 15 countries, such as India, Sri Lanka, the United States, the United Kingdom, and the Middle East. Originally made in Tamil, ‘800’ has been dubbed in Sinhala and Telugu, and it includes English subtitles for wider accessibility. The screenplay for the film ‘800’ was jointly written by Tamil film director M. S. Sripathi and Booker Award winner Shehan Karunathilake, whose first book Chinaman (on a fictional cricketer) was a big hit in cricket playing countries.

A Sri Lankan Baker’s Baguette Conquers France

This year France marked the 30th anniversary of the “Grand Prize of the Traditional French Baguette,” organized by the Paris City Hall. Tharshan Selvarajah, 37, an intense bearded man with a fierce work ethic, won, with his creation edging out 126 other baguettes. His prize? The honor, for the next year, of delivering those baguettes to President Macron and his staff. He also received some $4,250. The baker’s popularity is now such that long lines form outside his boulangerie, Au Levain des Pyrénées, on the fringes of eastern Paris. Selvarajah explained what made his bread special. Seated in a nearby cafe, he held up his hands.

“God gave us all different hands,” he said. A smile broke across his face. “My mother’s chicken curry and my wife’s chicken curry may use the same chicken but they do not taste the same,” he said. “God gave me the hands to make the best baguette in France! I am never angry with the flour as I knead the dough.”

A Unique Publication Presented to the President During his Recent Visit to Address the U.N.

A copy of ‘The Kingdom of Ruhuna: Home of the Yala National Park”, a newly published coffee table book, was presented to the President Ranil Wickramasinghe in New York during a glamourous reception hosted by the Sri Lanka Mission to the United Nations. A copy was also presented to the Foreign Minister Aly Sabry. The book was recently launched at the ‘The Beauty of Sri Lanka’ photographic Exhibition held by the America Sri Lanka Photographic Art Society Los Angeles (ASPAS), in association with the Consulate General of Sri Lanka in Los Angeles at the UCLA Art Gallery. It was authored by the founder President of ASPAS, Suriya Jayalath Perera, an accomplished photographer and wildlife enthusiast who transports the reader through the lens of his camera to Ruhuna’s hidden gems, where they can witness majestic wildlife in their natural habitats – from elusive leopards prowling through lush jungles to colorful birds soaring across vibrant skies. His painstaking research work over two years of residence in the Yala area, originally carried out for his Master’s thesis written in Sinhala at the Kelaniya University, was recently published with a historical narration of the people and places of the region in an attractively published coffee table book containing unmatched photography including some historical ruins deep in the jungle hitherto unknown even to historians. It was compiled and edited by Dr. Nandi Jasentuliyana, who supervised its translation and publication.  In his introduction to it, he points out the critical role played by the Kingdom of Ruhuna in the history of the Island from its inception in the 5th Century on many occasions.The Kingdoms of Anuradhapura and Polonnaruwa were in turmoil almost from the very beginning of their history in the fifth century B.C. due to periodic Indian invasions of  Cholas, Pandyas, and Pallavas forcing some of its people with its rulers to flee to the South and eventually to be reclaimed by Prince Dutugamunu from the ruling family of the Kingdom of Ruhuna who led an army from Ruhuna.

JAPCHAI (Korean Noodle Speciality)

Ingredients

  • 4 cooked potions of dangmeon cooked sweet potato starch noodles
  • 1 Carrot, peeled and julienned
  • 1/2 Onion, cut into 1/4″ slices
  • 2 cups oyster mushrooms, cut into bitesized pieces
  • 1 1/2 TBSP white granulated sugar
  • 3 TBSP Soya Sauce
  • 2 tspn. vegetable oil
  •  Pinch of Black Pepper (optional)
  • 1 tspn. roasted Sesame seeds (optional)

STEP 1

If Danmyeon noodles are long, carefully cut the noodles with scissors to make them fit the diameter of the diameter of the inner pot.

Lay the noodles in a criss-cross pattern to prevent clumping.

STEP 2

Lay the Carrots, Onions and mushrooms on top of noodles.

STEP 3.

In a small bowl, whisk sugar, soy sauce, vegetable oil, and 3/4 cup of water until well combined.

Drizzle liquid over the vegetables and noodles.

These quantities are sufficient to serve four or you can serve it as a side dish. I once served it with a 

Sri Lankan Shrimp Curry and it was very nice.You  can even put some sauteed Shrimp in a little Chilli Sauce (not too much) or just drizzle with a spoon on top of the whole dish.

I am answering the first question which you will send.  The DANGMEON (sweet potato starch noodles) is not difficult to find in the Asian Markets and are sold in  packets.

Recipes From Roma's Kitchen

Tangy Crab Salad Sandwiches

Ingredients
8oz (250g) Japanese or baby cucumbers
1/4 teaspoon salt
1 cup (150g) cooked or canned crabmeat
2 tablespoons lemon or lime juice
1/2 teaspoon ground white pepper
4 fresh tofu buns or poppy seed bread or all
  grain bread rolls
1 teaspoon finely sliced Thai basil leaves,
  to serve.

CHILLI DRESSING
1 to 2 tablespoons minced red finger- length
  chilli
2 cloves garlic, minced
6 shallots or 1 small onion, minced
1/2 cup (125ml) water
1 1/2 tablespoons sugar
2 teaspoons fish sauce 

METHOD
1.Make the Chilli Dressing by combining all the ingredients 
  in a saucepan and simmer over high heat for about 6 minutes, stirring occasionally, until the mixture has thickened. Remove and set aside to cool.
2.Peel the cucumbers, then slice very thinly. If using larger
  cucumbers, cut in half lengthwise first, scrape out the seeds with a spoon before slicing the cucumbers. Rub the salt into the cucumber slices and mix well, then strain or squeeze the cucumber to remove the liquid. Add all but 1 Tablespoon of the chilli dressing, crabmeat, lemon or lime juice and pepper to the cucumber slices and toss to combine.
3.Make a slit in the Bread Rolls and stuff each roll with the 
  cocumber crab mixture, then top with reserved Chilli Dressing and Basil leaves when served.
NOTE: Japanese cucumbers are very small and crunchy, and almost seedless. Baby cucumbers.

SLAASC – Mobile Clinics Agreement Reached

SLAASC - Mobile Clinics Agreement Reached

President of Sri Lanka America Association of Southern California (SLAASC), Niroshan Kahawatte has reached an agreement with the Tri-State Community Healthcare (TSCHC) to provide medical services to the Sri Lankan community in SOCAL. TSCHC’s outreach program is designed to help enhance access to quality medical services in underserved communities. TSCHC takes an active role in community events such as health fairs and partners with organizations as SLAASC that provide adult and children services by providing health care services through Mobile Medical Clinics. Arrangements are being made to hold the first Health Care Mobile Service to the Sri Lankan Community at the Christian Church in Van Nuys. It will be followed by Mobile Services in Orange County and Riverside County. Arrangements are also underway with the UCLA Health Team to provide blood donation programs at the above locations where the health care services are provided.

At the planned locations, the community will have the opportunity of having testing carried out for Blood Pressure, Diabetes, TB, Covid and a variety of other ailments. Further

Ravi Gunewardena of Los Angeles Elevated to Fellow of the AIA National Organization

The Los Angeles firm of Escher Gunewardena Architecture is pleased to announce the elevation of its founding principal Ravi Gunewardena to the status of Fellow of the American Institute of Architects, one of the highest honors that the AIA awards. Ravi joined 6 new Fellows from Los Angeles to be inducted at the AIA National Convention in San Francisco on June 8, 2023. The AIA/LA announcement states, “the Fellows program was developed to elevate architects who have achieved a standard of excellence in the profession and have made a significant contribution to architecture and society on a national level. Only 3% of AIA members have this distinction”. The elevation recognizes work accomplished during the past 25 years by the firm that Ravi established with his partner Frank Escher in 1997, as well as his individual contributions to the profession. Ravi is presumably only the second Sri Lankan-American architect to be admitted to the AIA’s College of Fellows. Among projects included in Ravi’s nomination were the exhibition design of “The Jeweled Isle: Art from Sri Lanka” at LACMA (2018), arguably the first major comprehensive exhibition about the Sri Lanka held at a major institution in the United States. Sri Lankan born Tamil MP Gary Anandasangaree has been appointed as a Cabinet Minister in the Canadian Government. Gary Anandasangaree is the son of former MP and Tamil United Liberation Front (TULF) leader Veerasingham Anandasangaree. He was among seven rookie MPs who have been promoted to Prime Minister Justin Trudeau’s Cabinet following a major reshuffling.Gary Anandasangaree was first elected in 2015 as the MP for the Toronto riding of Scarborough-Rouge Park.

On Wednesday, he was sworn in as Minister of Crown-Indigenous Relations.

The first Sri Lanka born woman to be elected to Australia’s Federal Parliament in Canberra was in Colombo recently.Cassandra Fernando (35) migrated with her parents to Australia at the age of 11 and grew up in Dandenong, Southeast of Melbourne, North Victoria.There she worked at Woolworths in Dandenong Plaza for around 15 years, including as a pastry chef. She was educated at William Angliss Institute, Box Hill Institute. Representing workers in the retail and fast-food industries. Cassandra is currently the Labour MP for the Division of Holt since the 2022 federal election. Cassandra’s story would undoubtedly inspire and drive many young people both in Sri Lanka and elsewhere. Being a member of a country’s influential political party at such a young age is a challenging task for many of us.

Sri Lankan Baker Tharshan Selvarajah who won Paris’s ‘Best Baguette’ award for 2023 arrived in Colombo. The prize was 4,000 Euros and a year-long contract to supply baguettes to the President of France at the Élysée Palace. Tharshan Selvarajah, a resident of Thellipalai in Jaffna, arrived in Sri Lanka with his wife and children for a three-week visit. He told the media at the BIA premises that he went to France in 2016. He said that he didn’t know to speak French and how to work in a bakery when he arrived in France. However, he managed to join at Au Levain des Pyrénées on the eastern side of Paris .The owner is a very friendly person. He taught me French as well as the bakery industry. Now the owner is 70 years and I have been able to purchase that bakery three years back.

How does one capture in a few paragraphs thirty-three years of unparalleled service to a community? Impossible and grossly inadequate but let me try, Anton Swan’s colossal effort must not go unrecorded. I had the pleasure of meeting Anton Swan in 2015 on being appointed Consul General of Sri Lanka for New South Wales and Queensland. He was by then a veteran and more so a legend. Being a rookie at Diplomacy it took me a few weeks before I could drum up the courage to telephone him.I knew that Anton had by then seen many a High Commissioner and Consuls General come and go. I finally did call him. ” Anton Swan speaking,” he said. I stood up from my chair and words betrayed me. I stuttered and stammered, finally saying who I was. ” How have you settled in? ” he asked. After the usual pleasantries, I asked Anton when I could visit Queensland. He consulted his diary and given his busy commitments gave me months’ notice. I did visit Brisbane and what a delight it was to meet with the great man, Bronwyn, his genial wife, and his family. Anton explained in minute detail the plethora of difficulties he had in getting quick responses from the Consulate in Sydney which placed him in difficulty as he was the point person in Queensland and those who sought his services were not interested in the internal administrative maneuvers. Queensland, covering a large geographical area, did pose a problem for Anton, as a person arriving from a far-flung post had to get his/her problem solved with one visit.This was not lost on me and I tried my best to accommodate him. Anton was efficient, diligent, and focussed. He knew his fold and they loved him in return. Being born a Burgher, he did not possess a single mean bone in his body and rallied the varying communities as Sri Lankans first and Sri Lankans last. He had by then identified the movers and shakers whom he could call on to help him organise varying functions to perfection. These were not ” One-Offs”, as he did so for 33 years, speaks volumes of his staying power. Quite unparalleled in the history of Sri Lankan Diplomatic history and perhaps in the world. Nothing lasts forever and Anton finally decided to hang up his boots. There were many instances when he felt that it was time to retire but Colombo would not have none of it. Anton held Queensland with distinction and Colombo simply left him in place whilst the Queenslanders in return felt safe with him. He was the rock of Gibraltar in Queensland for his community as well as his colleagues from other Embassies and High Commissions. Anton’s benevolence knew no bounds. His charities were many and went unsung. A silent doer, he was. His humane nature endeared him to all who came in contact with him. I recall Anton phoning me to say that there was a young lad who was peering through his window dressed in bedraggled clothing. On inquiry he found the boy to be from Kandy and a Trinitian to boot, who had lost all andwas wandering around sleeping at railway stations till someone directed him to Anton. Anton bathed him, fed him, clothed him and gave him some money (quite a bit) and of course called me. He paid and sent him on a flight to Sydney. Members of the Trinitian community in Sydney bought him safe passage back to Colombo. Did it end there? No. Anton would call me several times thereafter to find out how the lad was doing. How does one man hold down an honorary position with high-quality performance for 33 years? I did find the answer. Anton did swim the palk strait as a young man. Though that did not take 33 years to complete, it was the stepping stone to his staying power. I spent many happy days and enjoyed the hospitality of Anton and Bron. They were memorable and joyous. Bron was the perfect foil for Anton and was equally loved by all.

Take a well-earned rest, Anton. You will be remembered for your work. But, more than that, loved by all whom you came to contact with. Those are big shoes you leave behind.

CHILLI CRABS
INGREDIENTS
  • 2 Cooked crabs, about 1/2 lbs
  • 1/2″ cube shrimp paste
  • 2 cloves garlic
  • 2 fresh red chillies, seeded or
  • 1 teaspoon chopped chili from a jar
  • 1/2 ” fresh ginger root, peeled and sliced
  • 4 tablespoons sunflower oil
  • 1 1/4 cups tomato ketchup
  • 1 Tablespoon dark brown sugar
  • 1/2 cup warm water
  • 4 scallions, chopped to garnish cucumber
  •  chunks and hot toast, to serve (optional)
Method
1.Remove the claws of one crab and turn it onto
  its back with the head facing away from you. Use
  use your thumbs to push the body up from the main
  shell. Discard the stomach sac and “dead men’s fingers,”
  i.e. lungs and any green matter. Leave the creamy brown
  meat in the shell and cut the shell in half with a cleaver or
  very sharp knife. Cut the body section in half and crack the
  claws with a hard blow from a hammer or cleaver. Avoid
  splintering the claws. Repeat with the other crab.
2.Grind the shrimp paste, garlic, chillies and ginger to a paste with a pestle and mortar.*(I have an extra coffee grinder that is great for these small jobs)
3. Heat a wok and add the oil. fry the spice paste, stirring
constantly, without browning.
Stir in the tomato ketchup, sugar and water and mix the sauce well. When just boiling, add all the crab pieces and toss in the sauce until well coated and hot. Serve in a large bowl, sprinkle with the spring onions. Place in the center of the table for every one to help themselves. Accompany this finger-licking dish with cool cucumber chunks and hot toast for mopping up the sauce, if you like.

Merrill J. Fernando

Merrill J. Fernando (93) The founder of popular Sri Lankan tea company Dilmah has died in Colombo. He was surrounded by his sons and grandchildren when he passed away on July 20th, 2023. He was known for his iconic ‘do try it’ slogan. The founder had helped create the brand’s first Single Origin Tea in 1988, and worked up until he was 91. He also founded the Merrill J. Fernando Charitable Foundation, which supports youth, entrepreneurs, community organisations, incarcerated people and war widows in Sri Lanka. His son, Malik J Fernando, shared a heartfelt tribute to his father on LinkedIn. ‘He was such a towering figure in our lives; we never thought he would leave us,’ he wrote.

Jermyn Fernando passed away in Colombo, Sri Lanka on July 15, 2023. Brother of Locksley Fernando of Los Angeles, Ca. Former Manager of Fountain Cafe. At the time of passing away he was the most senior Lion in the Colombo Lions Club. Past pupil of

St. Joseph’s College, Colombo.

His funeral was at Kanatte on July 17, 2023. 

 

 

 

Joe (Nage) Victoria – Passed away in Sri Lanka. Husband of Swarna (deceased) and son Luckshan (deceased),​ brother of Selve,​ Mirani,​ late Raj,​ Wije,​ Mahe and Agnes. Remains were at Western Florists Funeral Parlour,​ Negombo. Burial was on 22nd July 22, 2023. at Raddoluwa Cemetery .

Recipes From Roma's Kitchen

Warm chickpea salad with chili and lime dressing

  • 2 tablespoons peanut oil
  • 1 yellow(brown onion), finely chopped
  • 2 cloves garlic, finely chopped
  • 1 1/3 cups (14 oz/440g) drained, canned chickpeas
  • juice of two limes
  • 1/4 cup (2 fl oz/160ml) chili oil
  • 1/2 cup (3/4 oz/20g) fresh cilantro (fresh coriander leaves
  • salt and freshly ground black pepper
  • crusty bread, warmed, for serving

METHOD.

Heat oil in a large frying pan or wok over medium heat. Add onion and garlic and cook until soft,3-5 minutes. Add chickpeas and stir until heated through,about 3 minutes. Reduce heat to low,add lime juice and cook, stirring, for 1 minute. Add chilli oil and cilantro and season with salt and  pepper. Serve warm with bread.

Serves 4.

Happy 100th Birthday Esmie Herft

Our Mum Esmie Marie Audrey Scharenguivel was born on

June 16th 1923 in Dehiwela, a hamlet to the south of the

capital, Colombo. The youngest and only daughter of Lucy

(Clements) and Christian Scharenguivel. She had three

brothers, Frederick (Fritz), Algernon (Algie), and Peter (Tony). Her close friends at Methodist College were Barbara Jansz, Ithali Gunawardene, Wai Fong Pakstun, and Celia Fernando. Esmie recalls wth great fondness these friendships, particularly with Barbara Jansz with whom she continued her friendship in Australia. On completing her education she was employed by the Ceylon Reports Centre during the war and later employed as a Corporal with the Ceylon Artillery. She met her Prince Charming Richard (Dicky) Herft who was serving in the British Army based in Ceylon. She married in 1946. Esmie’s husband died young. After his death, Esmie worked at the Ceylon Bible Society until 1985 when she retired to immigrate to Australia Happy 100th Birthday Mum.

Dearly loved daughter of (Osmund and Marjorie Caspersz (both deceased). Sister of Anthony (Tony),Caspersz Yvette Berenger, Blossom (Cynthia),Edwards, Susan Abraham and Annesley. Sister-in-law to Rita, Conrad (Pinkie), Hugh and George. Funeral and interment was on June 22nd 2023 at the Boyd Chapel Springvale and Gillard Lawn Cemetery.

Tangy Crab Salad Sandwiches

Ingredients

  • 8oz (250g) cooked or canned crabmeat
  • 2 tablespoons lemon or lime juice
  • 1/2 teaspoon ground white pepper
  • 4 fresh tofu buns or poppy seed bread
  • or all grain bread rolls
  • 1 teaspoon finely sliced Thai basil leaves,

 to serve

  • Chilli Dressing
  • 1 to 2 tablespoons minced red finger-length
  • chilli
  • 2 cloves garlic minced
  • 6 shallots or 1 small onion, minced
  • 1/2 cup (125 ml) water
  • 1 1/2tablespoons sugar
  • 2 teaspoons fish sauce

1.Make the Chilli Dressing by combining all the ingredients in a saucepan and simmer  over high heat for about 6 minutes,stirring  occasionally, until the mixture has thickened.  Remove and set aside to cool.

2.Peel the cucumbers, then slice very thinly. If using larger cucumbers, cut in half length- wise first, scrape out the the seeds with a spoon before slicing the cucumbers. Rub the salt into the cucumber slices and mix well, then strain or squeeze the cucumber to remove the liquid. Add all but 1 tablespoon of the  Chilli Dressing, crabmeat, lemon or lime juice and pepper to the cucumber slices and toss to combine.

3.Make a slit in the  Prepration time:20 minutes  Cooking time: 6 minutes.

“NuAsia” brings a new sound, a new love to country music, from Asia to America and  Enters Emerging 300 chart with it’s debut Single “Quiet Violence” at #140

NuAsia’s debut album, Quiet Violence, released June 9th, will break some new ground in country music. Judging from the title track, the album will draw a lot of country fans and create some new ones. Most of the new ground, in case the band’s name doesn’t clue you in, is that all six of the musicians are of Asian heritage, by design of the band’s drummer, leader, executive producer, and founder, Roshan Seresinhe, who is a Sri Lankan native. Another is the band’s lead singer and co-writer, Saint Cloud, a 22-year-old Boston woman of Vietnamese descent, a contestant from the “The Voice”, whose voice can go from whispery and ethereal to clear and forceful. Keyboardist Isamu McGregor, of Japanese descent, says Roshan, “is a jazz pianist and keyboard player of the first order” who has played all over the world in a variety of genres. Mark Flores, a fabulous lead guitarist who owns an impeccable resume, is of Filipino decent. Two other impressive Sri Lankan musicians Dhammika Jayasinghe on Bass Guitar and Janesh Ruwanpathirana on percussion completes the rhythm section. NuAsia is a pioneering band that is setting a precedent for Asian artists in the country music scene. Ambassador Dr. Palitha Kohona was the chief guest speaker at the birth anniversary celebration of monk Fa Xian at the city of Linfen in Shanxi. While marvelling at the incredibly arduous journey undertaken by Fa Xian, he welcomed the revival of the spirit of adventure, travel and discovery by today’s inheritors of the Fa Xian tradition. He said that Sri Lanka was ready to welcome Chinese travellers in the same spirit as it had welcomed Fa Xian 1600 years ago.

Dr. Kohona shared the same thoughts at a meeting with the Secretary of the Party Leadership Committee.

Sri Lankan born Ayesha Smart, 34, can now sit as a Recorder in crown courts across the north east of England as well as being the youngest non-white person to take up the role, she will be the third youngest person from any background to be selected. The process of becoming a judge is complex, involving two sets of exams, a role play exercise and an interview and the final approval has to be given by the King.

“Everybody says it takes several goes at the process to get through, so I thought I would give it a go and at least I know what it’s like.”

Jayantha Dhanapala (85)
Veteran diplomat and former UN Under-Secretary-General passed away at the Kandy National Hospital.

Jayantha was also a

distinguished old boy of Trinity College, Kandy and winner of

Ryde Gold Medal as best student in 1956.

 

 

 

I was saddened to learn that our friend and Sri Lanka’s prominent diplomat Ambassador Jayantha Dhanapala has quietly closed the door of life and departed from us. To me, a sorrow that is deep and personal. I have known Jayantha since we were two of three finalists for the Herald Tribune essay contest for a traveling scholarship to the United States in the late 1950s; he from Trinity, and I from Richmond, and he won out. Since then, he never stopped shining on the international stage, culminating in his narrow loss in the competition for the Secretary General of the United States post. In the meantime, he had served Sri Lanka as a foreign service member in countless capitals and as Ambassador to India, China, the United States and the United Nations, and Washington. He also served as Under-Secretary-General of the United Nations Department of Disarmament, during which he led the U.N. team to investigate the nuclear sites in Iraq just before the Iraqi war and later headed the U.N. Institute of Disarmament Research (UNIDIR). I had the privilege of working closely with him on joint U.N. projects and traveling to various cities, including Ulan Bator, Mongolia, during which we nearly escaped an airline disaster over the then-Soviet Union. Whether it was in the course of official work or the relaxed evenings we spent after a full day of work, it was highly congenial to be in his company. At work, he knew the art of negotiation of being firm while being most congenial, no mean talent that took him to the summit of international diplomacy. He also served Sri Lanka as Foreign Secretary, Head of the Peace Secretariat, and finally as Senior Advisor to the President of Sri Lanka. Few Sri Lankans have ever reached those dizzy heights. The loss of my friend profoundly saddens me, and I join the diplomatic world that will mourn the death of a diplomat par excellence and a Gentleman to the hilt who served Mother Lanka well! Adlai Stevenson, the U.S. Ambassador to the United Nations, once commented about a man and his contribution: “It is not the years in a life that counts; it is the life in the years.” By that measure, Jayantha Dhanapala is a shining star that lived! We will miss him, and may he find peace!

Pomegranate-Orange Chicken - elanka

Pomegranate-Orange Chicken 

  • Ingredients
  • 1 large orange, zest finely grated, juiced
  • 1 cup pomegranate juice
  • 1 ½ teaspoons dried thyme leaves
  • ⅛ teaspoons ground cinnamon
  • Freshly ground black pepper
  • 6 teaspoons. canola oil
  • Kosher salt
  • ¾ cup low salt chicken broth
  • 2 sweet potatoes, peeled and cut onto 1 inch pieces
  • 2 medium parsnips, peeled and sliced on the diagonal, ¼ inch thick
  • 1 red onion, peeled and cut into ¾ inch thick wedges
  • 1 4-pound chicken, cut into 8 serving pieces, trimmed of extra skin and fat, patted dry
  • 1 cup coarsely chopped walnuts

Method
Position a rack in the center of the oven and heat the oven to 400°F.
In a medium saucepan, combine the orange and pomegranate juice. Bring to a boil over medium heat and reduce to ¼ cup, about 15 minutes. Add ½ teaspoon thyme, cinnamon, and ¼ teaspoon pepper. Divide the mixture between two small bowls. To 1 bowl, add two teaspoons of the oil and ½ teaspoon salt. To the other, add the chicken broth, all but 1teaspoon of the orange zest and ¼ teaspoon salt.
Scatter the sweet potatoes, parsnips, and onion over the bottom of a metal, glass or ceramic baking dish that measures about 10x15x2 inches. Toss with the remaining 4 teaspoons oil and 1 teaspoon thyme. Arrange the chicken pieces skin side up on top of the vegetables and brush with all of the juice-oil mixture. Roast for 30 minutes.
Remove the pan from the oven and reduce the temperature to 375° F. Pour the juice-broth mixture around the chicken pieces and scatter the walnuts around the chicken. Return the pan to the oven and roast until the vegetables are tender and instant read thermometer registers 165° F in several pieces of chicken, 20-30 minutes.
Transfer the chickento a warm platter. Use a slotted spoon to arrange the vegetables and walnuts around the chicken. Sprinkle the vegetables with a little salt and sprinkle remaining orange zest over all. Tilt the roasting pan so that the juices gather in one corner. With a large shallow spoon, skim as much fat as possible from the pan sauce. Season the sauce to taste with salt and pepper and pour into a pitcher to pass at the table.
Pomegranate and orange juices form the basis of this dynamite chicken dish that echoes an Eastern Mediterranean flavor combination.

Sampath Bank PLC and Hotel Developers (Lanka) Limited (owner of Hilton Colombo) recently signed a facility agreement to finance the ongoing guest room Refurbishment Project of the landmark ‘Hilton Colombo’ Hotel located in the heart of Colombo. This is the first major revamp of the Hotel property since its inception in 1987.

President Ranil Wickramasinghe left the Katunayake Airport on May 4th for England to attend the coronation ceremony of King Charles III. Delegation of eight is to accompany the President on the visit. The coronation of King Charles III is scheduled took place on May 6, 2023 at Westminster Abbey. King Charles III was crowned as the King of England six months after the passing of his mother Queen Elizabeth II, who was the longest reigning monarch.

The Sri Lanka Embassy in Beijing hosted a grand Vesak celebration on May 5th with around 500 Chinese and Sri Lankans participating. Reverend Uduwe Dharmaloka Thero led the assembly in reciting gaathas. Deputy Chief Thero of the Lanka Amarapura Mulawansha  Maha Nikaya, the Venerable Yogiyane Sobhitha Thero, spoke of Buddhism being more a way of life and of the long standing religious ties between China and Sri Lanka. Ambassador Dr. Palitha Kohona, who presided over the event, spoke of the Buddha’s message of non-violence and of metta, mudita, karuna and upekha and their relevance in today’s strife torn world.

The Soul Sound’s Academy is the only Lankan choir amongst many from Commonwealth countries invited to participate in the event which was broadcast by BBC London. Among the stars performing at the live concert before the newly crowned King and Queen Consort, are Lionel Richie, Katy Perry and the British pop group Take That. Also taking top billing are the Italian opera star Andrea Bocelli and Welsh singer Sir Bryn Terfel who performed as a duo.

City Cinema Mt Lavinia which was closed for a month re-opened on April 28 with a new management as ‘City Lite Cinema’ by Anura Jasenthuliyana of Movie Works (pvt) ltd.

The refurbished theatre was opened with the newest ‘PS 2’ (Ponni Selvam) Tamil Film. The cinema with a capacity of 100 seats (AC) and Dolby Digital 3D technology has car park and a canteen. Owned by Jasenthuliyana who is also the Secretary of Film Exhibitors Association runs the Lite cinema chain which includes Amity Maharagama, Vista Jaela, Sky Matara, Max Katubedda, Wox Avissawella, Nikad0 Kadawatha and Sarasavi Alawwa.

Anoma was a famous classical Sinhalese singer.

While living in Tustin, Ca. she helped many Sri Lankan immigrants by keeping them in her home when they first arrived.

Recipes From Roma’s Kitchen

Panna Cota

Panna Cota

Ingredients:

  • 1 Cup Whole Milk
  • 1 pkt (2 ½ tsps) unflavored gelatin
  • 2 cups heavy cream
  • ½ cup + 1 Tbsp. sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 cup sour cream

 

Berry Sauce:

  • 2 cups berries divided into 1 cup portions
  • 3 Tbsp. granulated sugar
  • ½ Tbsp. lemon juice

 

Method:

 1.Off the heat, place 1 cup milk in a medium pan. Sprinkle the top with the gelatin. Let stand 3-5 minutes or until gelatin is softened. Place pan over medium/low heat and stir until gelatin dissolved and mixture is steaming about

4-5 minutes (DO NOT BOIL)

  1. Add 2 cups heavy cream, ½ cup and 1 Tbsp. sugar, 1 tsp vanilla and a pinch of salt. Continue stirring for 5 minutes until sugar is fully dissolved and mixture is steaming, about 4-5 minutes (DO NOT BOIL) remove from heat.

3.Place sour cream in a medium bowl with a pouring lip. Whisking constantly, gradually add warm cream. Once the mixture is completely smooth, divide into 6 or 8 ramekins. Refrigerate until fully set 4-6 hours.

 

  • How to make Berry Sauce

 1.In a small pan combine 1 cup berries, ½ Tbsp. lemon juice and 3 Tbsp. sugar. Bring to a low boil and cook 4-5 minutes or until syrupy.

2.Stir in remaining 1 cup of fresh berries and remove from heat. When syrup is at room temperature  or just barely warm, spoon it over the top of chilled panna cotta

The Embassy of Sri Lanka, together with the Sri Lanka – China Economic, Education, and Cultural Association (SCEECA), organized the “Beijing Soorya Mangalya” (National New Year) on 16 April 2023, at the Embassy following rituals, customs and tradition. Over 250 invitees, including, Ven. Dr. Bodagama Chandima Nayaka Thero and his disciples, the Sri Lanka community, Sri Lankan students, and Chinese friends attended. Addressing the gathering, the Ambassador Dr. Palitha Kohona extended warm Awrudu wishes to everyone. He said that Sri Lanka is hoping that the reopening of China will result in many Chinese tourists visiting Sri Lanka and helping to revive its flagging tourist industry which was buffeted by COVID-19. We are grateful that Sri Lanka is in the list of 20 countries published for Chinese tourists to visit. China was the main source of global tourists in 2019.

Squid/Cuttle Fish or Dhallo Curry

(which ever name you call it)

Ingredients

1 lb.cuttle fish

2 tspns. salt

2 slices ground ginger

2 teaspoon fenugreek

1/2 tspn. sweet cummin powder

1 1/2 tspns corriander powder

a sprig of curry leaves

2-3 tspns. lime juice

2 dessertspoons oil

4 oz. 1st extract of coconut milk

2 dessertspoons chilli powder

6-8 cloves garlic

1 tspn. pepper powder

1/2 tspn. cummin powder

3-4 green chillies chopped

1 oz. red onions,chopped

12oz. 2nd extract of coconut milk

Method

1.Clean cuttle fish. Cut into 1″ pieces

2.Mix together with all the powdered

  ingredients and salt.

3.Heat oil. Add curry leaves onions and fry

  for a few minutes.

4.Add cuttle fish and left over ingredients

  and cook for 5-7 minutes.

5.Add second extract of coconut milk and

  cook until done.

6.Add 1st extract of coconut milk.Bring to 

  boil add lime juice and take off fire.

Ingredients for 8 portions.
