World Scout Day celebrations and the presentation of Presidential Scout Certificates were held under the patronage of President Gotabaya Rajapaksa at the Presidential Secretariat. The World Organization of the Scout Movement is the largest international voluntary organization for children with over 52 million children in 172 countries. The highest award a Scout can receive is the President’s Scout Medal.

The 74th Anniversary of Independence of Sri Lanka was celebrated at the Embassy of Sri Lanka in Beijing. The Ambassador invited Chinese friends to visit Sri Lanka when the Chinese border controls are  relaxed. He invited Chinese investors to consider Sri Lanka as their preferred destination for  investments. Referring to the bilateral trade, the Ambassador said that Sri Lanka has many more  routes through which to enter the lucrative Chinese market.

The traditional oil lamp was lit by the Ambassador, Embassy staff and the Sri Lanka community members. This was followed by religious observances conducted by six Buddhist monks from the Lingguan temple, led by the Most Venerable Shi Chang Zang Thero, Vice President of Buddhist Association of China with five other monks.The Independence Day message of H.E. the President, Gotabaya Rajapaksa, was screened. Addressing the gathering, the Ambassador, Dr. Kohona, stated that Sri Lanka has been successful in vaccinating 85% of the population. He thanked for the support extended by China, in particular, for the vaccination drive.

Ashton Agar, who opened batting for Australia in the third T20I in Canberra, has a Sri Lankan origin. While his father is an Australian, the mother is a Sri Lankan, Sonia Hewawissa. Ashton is the grandson of Nala Hewawissa who played cricket for Dharmaraja College, Kandy. Sonia, who emigrated to Australia in 1974, says her eldest son is proud of his Sri Lankan descent.

Queen Elizabeth II, as Head of the Commonwealth, has recognised Deborah Edirisinghe, representing Sri Lanka, as the 211th Commonwealth Point of Light in honour of her exceptional voluntary service supporting and caring for disadvantaged children. Debbie, aged 38, is the founder of ‘Child Action Lanka’, a network of children’s shelters based in the city of Kandy which cares for over 1,500 children. Deborah leads a team of 110 volunteers to deliver a holistic approach to care which targets the underlying causes of inequality and provides development that is sustainable and community-based.

Anjuli Appapillai is currently pursuing her PhD in mechanical engineering at MIT. She completed her Master’s at MIT in 2006, which focused on the electrochemistry and microstructure of improved electrode materials for lithium-ion batteries. Her research interests stem from a desire to develop renewable and clean energy technologies and improve energy storage. Before coming to MIT, Anjuli earned her Bachelor’s in mechanical and materials science engineering at UC Berkeley in 2004. Outside of the lab, Anjuli enjoys playing sports, including ice hockey, squash, and running, as well as artsy 😊crafts, such as crocheting, sewing, and paper crafts.

Sajith was introduced to us by Rev. Buddhadatha Thero of the Bahirawakande temple in Kandy. Sajith was a student at Dharmarajah College in Kandy.

Anuk Arudpragasam’s ‘A Passage North’ has been included in the 2021 Booker Prize longlist. The 13 books on this year’s longlist were chosen by the 2021 judging panel: historian Maya Jasanoff (chair); writer and editor Horatia Harrod; actor Natascha McElhone; twice Booker-shortlisted novelist and professor Chigozie Obioma; and writer and former Archbishop Rowan Williams.

The list was chosen from 158 novels published in the UK or Ireland between 2020 and 2021.

Dr. Kumar Rupesinghe (79) passed away at his home in Colombo on February 19, 2022. His wife Marit and two children Anja and Natasja were by his side. Kumar was the son of Leslie Rupesinghe and Olga Perera. Brother of the late Ajit Rupesinghe and Pravin and Sonali Perera. There will be a memorial service at a leter date.

Recipes From Roma’s Kitchen

Home made (sri lankan home) This recipe has been

requested many times by several parents. I have now

replied to all of you by sharing it with all of you. Enjoy!

MARSHMALLOWS

Ingredients

3 standard measuring cups water

4 envelopes of unflavored gelatin

  packets

3 Measuring cups granulated sugar

1 1/4 measuring cup of light Corn Syrup

1/4 tspn. Salt

2 tspns. Vanilla extract

1 measuring Cup of Confectioners powdered 

  sugar

METHOD

1.Cover the bottom of a 9×13″ glass baking dish

  with foil and coat with nonstick spray.

2.Pour 3/4 cup water in the bowl of an Electric

  Mixer and sprinkle the gelatin over the water.

  Let this stand till the gelatin melts, about 5 minutes.

3.Pour sugar, corn syrup,salt and remaining 3/4 cup 

  water in medium saucepan, fitted with a Candy 

  Thermometer. Bring to a boil on high heat. Cook 

  until mixture reaches soft ball stage 238-240 degrees.

  Remove from heat.

4.With the gelatin mixture on low speed whisk adding

  hot syrup to the to the gelatin mixture pouring it down

  the side of the bowl. Gradually increase speed to high

  until it forms stiff peaks, 15 minutes.

5.Pour into oiled baking dish and smooth the top with a 

  spatula, uncovered at room temperature until firm. 3 hours 

  OR overnight.

  Sift 1/2 cup Icing sugar on top of parchment pan. Spray

  knife with oil (spray) and cut 2″ pieces and roll them in 

  Sugar.

*TIP.

Prepare your icing sugar with cornflour,this keeps any

moisture forming and helps keeping it dry. Once totally 

covered with this mixture,store it in a plastic bag and 

keep it in an air tight container.

You can also divide this mixture, add a drop of your 

choice of color and different flavors and make it

in a pretty bowl of light (pastel shades) or in AN AIRTIGHT

Large bottle which has a tight cover.

Dr. Kumar Rupesinghe passed away at his home in Colombo on February 19, 2022. Husband of Marit, father of Anja and Natasja. Son of Dr. Leslie Rupesinghe and Olga Perera. Brother of the late Ajith Rupesinghe, Pravin and Sonali Perera. Funeral arrangements are pending. A Memorial Ceremony will be held at a later date.

A Tribute to Kumar

My cousin Kumar Rupesinghe’s life was emblematic of the values that are so fundamental to our family and 

very much needed around the world today. He worked tirelessly for peace and for human rights in Sri Lanka as

well as in other parts of the world. His work encompassed social justice, equity and dignity for ALL. He was a 

prolific writer and editor of many academic journals. He chaired several organizations and NGO’s to help bring 

attention to global conflicts, in addition he was an august member of many boards around the world and was in the company of distinguished persons, such as Archbishop Desmond Tutu, Jimmy Carter, to name just a few.

He was a devoted husband to Marit and his two accomplished and beautiful daughters, Anja and Natasja.  

As the oldest cousin in our family, from my father’s side (Jim Wanigatunga), he was larger than life (to me, anyway) 

and commanded respect from all the other cousins. We would have arguments, quarrels and heated discussions, 

all in the name of family fun. In our adult years, he was a role model to all of us.

I will miss him…..may he Rest In Peace.

Gamini Gunawardane Appointed High Commissioner for Sri Lanka to Republic of South Africa

President Gotabaya Rajapaksa, with the approval of the Parliamentary High Posts Committee, has appointed Professor Gamini Gunewardane as the High Commissioner of Sri Lanka to the Republic of South Africa with concurrent accreditation to Botswana, Namibia, Zimbabwe, Zambia, Malawi, Mozambique, Lesotho, Swaziland (Eswatini), and Angola. He will be succeeding the present High Commissioner, S. Amarasekara senior civil servant and former Secretary to the Cabinet and several ministries who is completing his term on February 15th. Dr. Gamini Gunewardane was President of the Sri Lanka America Association of Southern California in 1988. The SLAASC was founded and incorporated in 1973.

“Vilithelu Penne,” a women’s organisation based in Canada has conferred the ‘Award of achievement’ to Gayathri Wickramasinhge, Colombo Municipal Council member, recognising her contribution to the community and their spiritual life. The award was conferred by the director of the organisation, Sashikala Narendra. Colombo District MP Mano Ganeshan and Express Newspapers Ltd., CEO M. Senthilnathan also participated in the awards ceremony and distributed the certificate and the memento respectively.

Shelton (Shelly) Gunewardena, was born in Colombo. He was the third son of postmaster and telecommunications engineer M.M.P Gunewardena and Josephine. He qualified through City and Guilds of London Institute, Radio Technology accreditation levels I through V, a pioneer in electronics engineering and an inventor, Shelly began his career as a radio technician. He designed and built the Voice of America Radio Station in Ekala, and subsequently joined CISIR (Ceylon Institute for Scientific and Industrial Research). He worked on numerous research and development projects at CISIR before emigrating to the United States in 1967.  In 1977 he developed and patented the Miniature Chip Inductor which was a ground-breaking technology that paved the way to modern day cell phones. In 1990, he and his son Rohan, founded Mil-Spec Magnetics, Inc. in Pomona, Ca., a Military Aerospace Magnetics company designing and manufacturing Transformers, Inductors and Solenoid Coils for US Government subcontractors such as Boeing, Honeywell, Raytheon, and Sandia National Laboratories.  A keen enthusiast of exotic motor cars, stereophonics, and Japanese landscaping, Shelly was also a founding member of the Sri Lanka America Association of Southern California and an anonymous supporter of many charitable organizations. Shelly passed away in Walnut, Ca. on February 8, 2022 (See the obituary column below)

On February 5th. a group of Sri Lankan expatriates under the banner “Zoom Amigos” accorded a farewell luncheon in honor of Professor Emeritus Dr. Gamini Gunewardene, Sri Lanka’s Ambassador designate to South Africa.

Victor Munasinghe (84) passed away in Santa Monica, Ca.

“My close friend Victor Munasinghe passed away on February 1, 2022. Victor’s nephew, Oliver Ranasinghe gave me the sad news this morning. I met Victor in Los Angeles when he first arrived several decades ago.  We developed a bond and friendship that lasted until his passing. Although I moved back to Sri Lanka, we kept in close touch and shared several lunches  and dinners whenever I visited Los Angeles. I respected his creativity and often used him as a sounding board when producing my films and writings. I respected his purity in his endeavors. His concern for others and his spiritual dedication was an inspiration to me. I shall miss my good friend who was always with me in spirit during the highs and lows of my life.”

Bhante Homagama Kondanna Thero (82)

passed away in London, England recently. Venerable Kondana Thero was the oldest of a family of 11. His siblings are Kusuma Premalatha in Washington DC, Nanda, Ratnaseeli, Rivina and Chitra in Sri Lanka, Weerawardhana in London, Swarna In Sri Lanka, Malkanthi and Ranji in Los Angeles and Lakshmi in Washington DC. A private ceremony was held at the West Covina Buddhist Temple attended by close relatives.

Shelton (Shelly) Gunewardena (92), passed away in Walnut, CA on February 8, 2022. Son of M.M.P Gunewardena and Josephine, Husband of the late Lorna, brother of Gaston, Victor, Rita (Madawala) and Quintus. Father of Sunetra, Ramani (Fernando), Nandini, Rohan, Ravi, Devika (Wijesinghe), and Sriyanthie (Mc Cabe), as well as in-laws Nimal Fernando, Sandra Gunewardena, Frank Escher, Sriyan Wijesinghe; grandchildren Chad, Shannon, Lara , Nina, Anjali, Seth, Krisante, Asante, Ravi, Johan, Shehan, Dilan and Skanda Jai; 6 great-grandchildren, and sisters-in-law Rani (Colombo) and Kamini (Toronto). The funeral will take place at St. Denis Catholic Church, Diamond Bar, on February 17, 2022 at 12 noon, followed by burial at Holy Sepulcher Cemetery, Orange , CA.

Robin Fernando (84) passed away on January 8th. Veteran Sri Lankan film and tele-drama actor Robin Fernando was a product of St, Benedicts college, Kotahena, he held national colors for Karate and Gymnastics. He was a popular actor in the cinema acting in more than in 80 films. His debut film came in 1965 “Chandiya”. He was also a renowned stunt coordinator. He acted in several tele-dramas and produced 2 films (Suradoothio based on Charlie’s Angels and Ninja Sri Lanka).  Robin is survived by his wife Violette, daughter Eranthi, Son Channa, and four grandchildren.

‘ LOVE IS IN THE AIR ” and to all young Valentines, here is a Delectable Treat you can share the smell of grilling , for your special love to say “I love you.” 

Grilled Chicken with Coffee Barbecue Sauce

 

*Barbecue Sauce

2/3 cup strong brewed coffee

1/2 cup ketchup 

2 tablespoons molasses

1 tablespoon cider vinegar

1 tablespoon orange juice

1 1/2 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1/2 teaspoon minced chipotle

   chile in adobo sauce*

 

*Chicken

1(2 1/2 – to3 lb.cut- up chicken

1 tablespoon vegetable oil

1/4 teaspoon pepper

METHOD

1.Set up grill as follows. For charcoal grill:

 Heat coals in center of grill to medium 

 heat.Divide coals,placing half on each

 side of grill, leaving center open. Place

 drip pan between coals.

 For gas grill: Light two outside sections,

 leaving middle section unlit (three burner grill)

 Or leave one side Or light one side or leave other

 side unlit (two burner grill). Place drip pan on unlit

 section. Heat on high until hot. Reduce heat to 

medium.

2.Whisk all Barbecue Sauce ingredients in small 

  saucepan until blended. Bring to a simmer over

  medium to medium-low heat,simmer 10 to 15

  minutes or until slightly thickened,stirring

  constantly. Reserve 1/2 cup sauce for basting,

  place remaining sauce in serving bowl.

3.Brush Chicken with oil sprinkle with salt and

 pepper.

4.Oil grill grates. Grill Chicken, covered, directly over

  medium heat or coals 6 to 8 minutes or until lightly 

  browned, turning once.

5.Move chicken over drip pan (indirect heat). Grill,

  covered 20 to 30 minutes or until chicken is almost 

  cooked through,turning once.

6.Brush chicken generously with reserved barbecue

 sauce. Return Chicken to direct heat;grill, covered,

 4 to 6 minutes or until no longer pink in center,

 turning once.Serve with remaining barbecue sauce.

4 SERVINGS.

*tip Chipotle chiles in adobo sauce can be found in

the supermarket in the Hispanic section. REMOVE

veins and seeds for less heat.

WINE. Offer a spicy red One or the other from Santa 

Barbara OR Raphael Valley Chile are both great.

Glittering Sri Lankan gemstones were showcased at a glamorous event hosted by the Embassy in Beijing on 17 January 2022. Sponsored by the ‘LARWINER – Gem Art Jewellery’, a range of stunning Sri Lankan blue sapphires and other coloured stones were displayed. Around 100 invited guests, including many elite dealers attended the event. Ambassador, Dr. Palitha Kohona while welcoming the guests, explained the history of Sri Lankan gem trade and the mining process, cutting, polishing and jewellery making. He invited the guests to visit Sri Lanka to see these for themselves. The Ambassador said that mini exhibitions of this nature will be organized in the future as well and hoped that exhibitors from Sri Lanka also will participate.

The memoir was launched on 1 January at Moonesinghe’s residence.

Cramel Oranges 
Ingredients
8 medium navel OR Cara Cara 
  oranges (about 4 1/2 pounds)
1 cup (7 ounces) white sugar
 2 cinnamon sticks or star anise poda
 2 tablespoons salted butter
* Juice two of the oranges to yield 3/4 cup juice.
 (If 2 oranges don’t yield enough juice, add water
  to measure 3/4 cup total. Set aside.
*Slice off the top and bottom  1/2 inch from each
 of the remaining 6 oranges. Stand each orange on
 one one of it flat ends and use a a sharp knife to cut
 down and around the fruit, following the contours of
 the flesh and peeling away all the skin and pith. Turn
 each orange on its side and thinly slice crosswise into
 rounds. In a 13-by-9 inch baking dish, arrange the rounds,
 slightly overlapping,in a ingle layer.
*In a medium saucepan, combine the sugar, 1/4 cup of the 
 orange juice and the cinnamon or star anise. Bring to a
 boil over medium – high heat (this should take two or three
 minutes) and cook, swirling the pan occasionally, until the
 sugar begins to color at the edges, another 3 to 5 minutes.
 (The bubbles should go from thin and frothy to thick and
  shiny.)
*Reduce the heat to medium low and cook,swirling the pan
  often until the sugar is coppery brown,1 to 3 minutes. Remove the pan from the heat,add the butter,then whisk until melted.
*Add a splash of the remaining orange and whisk until smooth (the mixture will steam and bubble vigorously), then add the remaining orange juice and whisk until fully incorporated. If the caramel separates and sticks to the bottom of the pan, return it to the heat and simmer until the hardened caramel dissolves.
*Pour the caramel evenly over the oranges, cover with plastic wrap,then refrigerate for at least 3 hours and upto 6 hours.
* Allowing the caramel to drip off into the baking dish,use a 
 slotted spoon to transfe rthe oranges to a serving platter or
 individual plates. Remove and discard the star anise or cinnamon from the caramel, then whisk to recombine and mix any juices. Pour the caramel over the oranges and serve. 
Start to finish: 40 minutes, plus chilling. Serves 6.

Sri Lanka’s oldest finance company, Alliance Finance Company PLC (AFC), has received the second tranche of USD 5 million from the Dutch Entrepreneurial Development Bank (FMO) as part of a long-term financing facility of USD 10 million to expand its growing portfolio of MSME business. AFC secured this USD 10 million facility from the Dutch entrepreneurial development bank FMO in mid-2021 and received the first tranche of USD 5 million on July 1, 2021 With an investment portfolio of EUR 6.3 billion, FMO is one of the largest European bilateral private sector development banks with investments in 85 countries. Desmond de Silva (77) The veteran Sri Lankan singer passed away in Melbourne, Australia of a heart attack. Regarded as the ‘King of Baila’, the legendary singer was born in Matara. He launched his career in popular music in 1963 as the lead vocalist of the Fire-Flies. He also performed with leading Sri Lankan pop groups – ‘Spitfires,’ ‘Gabo and the Breakaways,’ and the ‘Jetliners.’In 1976, he decided to form his own band, “Desmond and the Clan”, which performed in various countries in Southeast Asia.

Stir-fried shrimp with Tamarind

Ingredients

2 Tablespoons tamarind Paste

2/3 cup boiling water

2 tablespoons vegetable oil

2 tablespoons chopped onion

2 tablespoons palm sugar

2 tablespoons chicken stock or water

1 tablespoon fish sauce

6 dried red chillies, fried

1 pound uncooked shelled shrimp (leave the tails on)

1tablespoon finely chopped garlic

2tablespoons fried sliced shallots

2 scallions, chopped to garnish

a handful of cadjunuts to garnish

METHOD

1.Put the tamarind paste in a small bowl, pour over the boiling water and stir well to break up any lumps. set aside for thirty minutes. Strain, pushing as much of the juice through as possible. Measure 6 tablespoons of the juice,

which is the amount needed, and store the rest in the fridge. Heat the oil in a wok. Add the chopped onion and fry till golden brown.

  1. Add the sugar, stock, fish sauce, dried chillies and the tamarind juice, stirring well until all the sugar dissolves, Bring to a boil.

3.Add the shrimp, garlic and shallots. Stir-fry for about 3 -4 minutes until the shrimp are cooked.Garnish with the chopped scallion and sprinkle the cadju on top (if desired).

4.Serve with a bowl of steamed Rice .

 

Serves 4-6.

President Gotabaya Rajapaksa today released a thousand ecological floating islands to Beira Lake initiating the purifying process of the lake. Beira Lake has been polluted due to unauthorized urbanization and improper upgrading of sewerage infrastructure in Colombo. The “Ecological floating islands” method was implemented under the guidance of Chairman of Land Development Corporation, Retired Major General M.R.W. de Soyza.Ecologist Ranoshi Siripala points out that the experiment conducted for water purification by planting plants such as Cannas, Savandara and Heliconia using PVC pipes,bamboo and foam mattresses as floating supports has yielded successful results.

Officials in Sri Lanka unveiled a gigantic (683-pound corundum blue sapphire recently, they claim is the largest of its kind in the world. Local gemologists, who have examined the sapphire, said it was one of the rarest gems ever found due to its size. Jaggery Souffle

Ingredients

2 cups thick coconut milk

1 teaspoon vanilla

 1/4 teaspoon grated nutmeg

4 eggs

1/2- 1/4 lb. grated jaggery

4 teaspoons gelatine soaked in

1/2 cup cold water

 

Method

Dissolve the soaked gelatine over boiling 

water. Mix yolks, coconut milk and jaggery and

strain. Cook over a low flame till custard thickens

and coats the back of a spoon. Remove from fire 

and allow to cool. Add dissolved gelatine and flavoring.

Lastly fold in the stiffly beaten egg whites. Rinsa ring mold

in cold water and shake off the water but do not wipe. Pour

the custard into the mold and place in cold water (This will

make the souffle come out in layers of different shades of

brown when unmolded). Put the mold in the refrigerator

for 6- 8 hrs. to set. To unmold ease the sides of the souffle

with a knife, turn over and gently tap the mold or place your hands on the mold for a few minutes and for the warmth of your hands the souffle will unmold.

Decorate with roasted cadjunuts and cream.

Note: The souffle should be unmoulded just before serving and not too long ahead of time.

SERVES 4-6.

At a time of national emergency, in early-June, Senior Medical Officer Dr. Upul Ranasinghe attached to the Bandarawela Hospital saw a rising wave of COVID patients in the Uva Province which he knew the hospitals would be ill equipped to handle. He reached out to Colombo University Emeritus Professor Dr. Nalaka Mendis, who immediately responded by calling on Dr. Naj Nagendran (Foundation of Goodness – USA) and gathered together a likeminded group of humanitarians from Sri Lanka and overseas to include Manik Jayakumar (Q Trade Teas & Herbs USA), Felix Stephen (Volunteers to Assist Children with Disabilities, Sydney) S. Skandakumar (OruPaanai Trust – Sri Lanka and UK), Kushil Gunasekera (Foundation of Goodness) and Dr. Erosha Premaratne (Australia Sri Lanka Medical Aid Team) to raise funds and equipment urgently.

The ambassadorial position remained vacant since the retirement of Ravinatha Aryasinha. Samarasinghe resigned from Parliament in order to take up duties in the new position offered to him by President Gotabaya Rajapaksa.

Hayleys Chairman Mohan Pandithage with Hayleys Group skipper Avishka Fernando who received the MCA Premier League championship trophy from Singer Group Companies CEO Mahesh Wijewardena. Hayleys Group Recreation Club (HGRC) led by Avishka Fernando was crowned as the new “League” winner of the 28th Singer – MCA Premier League Cricket Tournament. Though the tournament had a pre-mature ending, Hayleys by virtue of being unbeaten and led the table of points at the point where the tournament stopped, the MCA Tournament Committee with the consent of the rest of the three teams, decided to award the league title to Hayleys.

Sirisena Cooray (90) Former Minister, passed away in Colombo.

He served as the Colombo Mayor from 1979 to 1989. He was elected to Parliament in 1989 from Colombo and represented Parliament till 1994. He was appointed the Housing and Construction Minister in the Cabinet of late President R. Premadasa. He had also served as General Secretary of the United National Party (UNP) during the tenure of Party Leader Ranasinghe Premadasa.

Rohan Tudawe – Passed away on December 4th, 2021. Husband of Mala, father of Gayan and Romali, father-in-law of Faith, grandfather of Dinill, brother of Malkanthi, Wasantha, Ajith, the late Sathis and of Upul and Amal, brother-in-law of Venetia, Rohini, Nishani, Shyamalee, Kalinga, Indira and Nirupa. Cremation was on the same day according to his wishes.

fattoush-ish bread salad……………

Crumbled feta star in this, red onion,

fresh mint, olives and pita star in this

Mediterranean bread salad.

 

Ingredients

1/4 cup extra-virgin olive oil; more as needed

1 Tbs. plus 1 tsp. red-wine vinegar

1 tsp. minced garlic

   Kosher salt and freshly ground black

   pepper

1/2 cup thinly sliced red onion

8 oz. pita bread or other flat bread,

  such as naan

1 1/4 lb. ripe beefsteak tomatoes

1 lb. ripe tomatoes of your choice

1 small cucumber, peeled, seeded, and

  diced (about one cup)

3 oz. feta, crumbled (about 1 cup)

1/2 cup coarsely chopped fresh mint

1/2 cup coarsely chopped fresh flat-

  leaf parsley

1/3 cup pitted black or green olives,

  quartered lengthwise

2 Tbs. coarsely chopped fresh oregano

  pinch of sumac (optional)

 

METHOD

In a small bowl, whisk the oil, vinegar, garlic,

and a pinch each of salt and pepper. Add

the onion and stir to combine.

Heat a broiler or a gas or charcoal grill

to medium high. Brush the bread with olive oil

on both sides and season lightly with salt.

Boil or grill the bread, flipping once, until nicely

toasted,3 to 4 minutes total. Transfer the bread

to a cutting board, then tear or cut into 3/4 to

1 inch pieces.

Cut the tomatoes into into pieces from 3/4 to 1 inch

pieces.

Cut the tomatoes into pieces from 3/4 to 1 inch, and

transfer to a large bowl. Toss the tomatoes with the

dressing and a good pinch of salt and let sit for 

5 minutes.

Toss the bread, cucumber, feta, mint, parsley, olives

and oregano with the tomatoes.Let sit,tossing

occasionaley, for 15 to 20 minutes. Season to taste

with salt and pepper and serve with a sprinkling of

sumac, if you like.

 

SERVES 6 to 8
