US Ambassador Julie Chung visited the Dewatagaha Mosque in Colombo recently at the invitation of Mr Reyyaz Salley and the Board of Trustees. “Like the United States, Sri Lanka has a rich diversity of faith communities who contribute much to their neighbourhoods, region, and nation. During my travels around this beautiful country, I have seen temples, kovils, mosques and churches, all coexisting side by side. This rich cultural heritage makes Sri Lanka a fascinating place. It is an amazing opportunity to live where my day starts hearing the Azhan call to prayer from the mosque and ends with the bana from the Buddhist temple in the evening.”

Ingredients
8oz (250g) Japanese or baby cucumbers
1/4 teaspoon salt
1 cup (150g) cooked or canned crabmeat
2 tablespoons lemon or lime juice
1/2 teaspoon ground white pepper
4 fresh tofu buns or poppy seed bread or all
grain bread rolls
1 teaspoon finely sliced Thai basil leaves,
to serve.
CHILLI DRESSING
1 to 2 tablespoons minced red finger- length
chilli
2 cloves garlic, minced
6 shallots or 1 small onion, minced
1/2 cup (125ml) water
1 1/2 tablespoons sugar
2 teaspoons fish sauce
METHOD
1.Make the Chilli Dressing by combining all the ingredients
in a saucepan and simmer over high heat for about 6 minutes, stirring occasionally, until the mixture has thickened. Remove and set aside to cool.

3.Make a slit in the Bread Rolls and stuff each roll with the
cocumber crab mixture, then top with reserved Chilli Dressing and Basil leaves when served.

Sri Lanka Offers Condolences Over Queen Elizabeth II’s Death

Sri Lanka’s President Ranil Wickremesinghe Thursday offered his “deepest condolences” over the passing of Queen Elizabeth II, the monarch of the former British colony for the first two decades of her reign.
“Deepest condolences to the Royal family, government and people of the UK on the passing of HM Queen Elizabeth II,” Wickremesinghe said in a statement.
Elizabeth II reigned as queen of Ceylon, as the island nation was known, until it became a republic and changed its name in 1972.
She visited Sri Lanka twice, travelling in 1954 to the central city of Kandy and the tea-growing mountain region of Nuwara Eliya, once home to a number of British-run plantations.
Her second visit in 1981 included a stop to view the construction of the country’s largest hydro-electricity dam, named for Queen Victoria.

Recipes From Roma’s Kitchen

CHILLI CRABS
INGREDIENTS
2 Cooked crabs, about 1/2 lbs
1/2″ cube shrimp paste
2 cloves garlic
2 fresh red chillies, seeded or
1 teaspoon chopped chili from a jar
1/2 ” fresh ginger root, peeled and sliced
4 tablespoons sunflower oil
1 1/4 cups tomato ketchup
1 Tablespoon dark brown sugar
1/2 cup warm water
4 scallions, chopped to garnish cucumber
chunks and hot toast, to serve (optional)
Method
1.Remove the claws of one crab and turn it onto
its back with the head facing away from you. Use
use your thumbs to push the body up from the main
shell. Discard the stomach sac and “dead men’s fingers,”
i.e. lungs and any green matter. Leave the creamy brown
meat in the shell and cut the shell in half with a cleaver or
very sharp knife. Cut the body section in half and crack the
claws with a hard blow from a hammer or cleaver. Avoid
splintering the claws. Repeat with the other crab.
2.Grind the shrimp paste, garlic, chillies and ginger to a paste with a pestle and mortar.*(I have an extra coffee grinder that is great for these small jobs)
- Heat a wok and add the oil. fry the spice paste, stirring
constantly, without browning.
Stir in the tomato ketchup, sugar and water and mix the sauce well. When just boiling, add all the crab pieces and toss in the sauce until well coated and hot. Serve in a large bowl, sprinkle with the spring onions. Place in the center of the table for every one to help themselves. Accompany this finger-licking dish with cool cucumber chunks and hot toast for mopping up the sauce, if you like.

sri lanka foundation’s sri lanka day expo and parade must not be missed – register now – letter from jayam
Dear Friends
We in Los Angeles are fortunate to have an organization like
the Sri Lanka Foundation in our midst. They go out of their way to do what they can for the community and Sri Lanka.
The Foundation is famous for many things, one of which is their Sri Lanka Day Expo and Parade held on the route of the famous Rose Parade in Pasadena, CA. Thousands of
Sri Lankans lined the streets of Pasadena to watch the parade with pride in the past.
Due to Covid, the Foundation has not been able to organize this annual celebration. Instead, they have thought of a great idea of celebrating “virtually.”
The previous virtual event in 2021 was a great success, with thousands clicking in to watch performances of Sri Lankan culture worldwide.
This year, the celebrations begin on August 10th. Lets show
our support to the Sri Lanka Foundation, who worked so hard to organize this event. Over 100 products will be showcased by Sri Lankan sponsors and vendors.
Please register and watch the wonderful performances of our very own Sri Lankans with PRIDE AND GRATITUDE!
Best wishes – Jayam Rutnam

Lankan Muslims forgo Hajj pilgrimage to save forex for the country

Over 1,500 Muslims who were planning to make the Hajj pilgrimage this year have decided to skip in a bid to help Sri Lanka conserve scarce foreign exchange. Saudi Arabia had allocated a quota of nearly 1,600 persons from Sri Lanka for the Hajj this year. It was the first time in two years Sri Lanka got an opportunity as Saudi cancelled the practice of one of the pillars of Islam for outsiders in 2020 and 2021 due to the COVID pandemic. Sources said if Sri Lankans were to undertake the pilgrimage the cost would have been around $ 7 million.
